Carrot & Hummus Sandwich

Ingredients:

  • 1 grated carrot
  • 1/2 cup of lettuce
  • 1/2 a cup of spinach
  • 6 cherry tomatoes  (halved)
  • 2 slices of wholemeal bread
  • 2 tbsp of homous

What to do:

  • Evenly spread the homous over 2 slices of bread.
  • Place the lettuce, grated carrot, cherry tomatoes and spinach on one slice of bread.
  • Add the other slice of bread on top then cut in half.
