Mediterranean Stew

Serves 3

Ingredients:

  • 1 – 1.5 cups of water
  • 1 tsp of cayenne pepper
  • 2 tsp of smoked paprika
  • 1 tsp of black pepper
  • 1 chopped onion
  • 3 cloves of garlic (chopped finely)
  • 1/2 broccoli
  • 2 chopped carrots
  • 3 diced tomatoes
  • 500g carton of passata
  • 1 sliced green pepper
  • 1 sliced yellow pepper
  • 1 cup of sliced mushrooms
  • 2 potatoes (chopped into small chunks)
  • 1/2 cup chopped coriander
  • 1 cup of spinach

What to do:

  • Heat a pot on medium heat.
  • Add the onion, garlic, peppers, tomatoes and mushrooms. Saute for 10 minutes until all the ingredients become slightly soft.
  • Add the passata, water, cayenne pepper, black pepper and smoked paprika. Stir well.
  • Add the potatoes, carrots, spinach, coriander and broccoli. Stir well.
  • Leave to cook for 30 minutes on a medium heat (or until the potatoes and carrots are cooked).
  • Take the pot off the heat and leave to cool for 5 minutes then serve!
