Green Cauliflower Soup


Serves 3
  • 1/4 cup of green lentils
  • A bunch of spring onions
  • 1 large potato
  • A quarter of a cauliflower
  • 1 green chilli pepper
  • 1 tsp of lineseeds
  • 1 green pepper
  • 1/2 a tsp of medium curry powder
  • 1/2 of ground ginger
  • 2 tsp of garlic puree
  • 2 vegetable stock cubes
  • 3 cups of water
  • 1 tsp of dried mixed herbs
  • 1/4 of a cup of fresh coriander
What to do:
  • Peel and chop the potato and garlic, then chop the spring onions, coriander, pepper, chilli and cauliflower.
  • Bring the water to a boil, add all of the ingredients and cook for around a 30-35 minutes until the lentils and potatoes are cooked.
  • Transfer the soup into a blender and blend until completely smooth. Serve with a garnish of coriander!
