Banana & Cinnamon Biscuits

Servings: 30


  • 2 1/2 cups of wholemeal flour
  • 1 1/2 tsp of cinnamon
  • 2 mashed bananas
  • 2 tbsp of chia seeds
  • 3/4 cup melted coconut oil
  • 2/3 cup demerara sugar

What to do:

  • Preaheat the oven to 160c.
  • In a bowl, combine the sugar, oil and banana and mash together with a fork until smooth (there will still be a few lumps).
  • Add the flour, chia seeds and cinnamon. Mix until smooth.
  • Roll the mixture into a ball then flatten on a surface with a rolling pin. Smooth the mixture down until it’s about 1/2 inch thick. Cut out your shortbreads and place them in the oven on greased trays.
  • Cook for 20 minutes or until golden (flip the biscuits halfway through cooking time).
